I'd call Coldplay a Prime Rib and Bon Jovi Mystery Meat.

What would U2 (and Springsteen) be?

U2 is Kobe Beef. Springsteen is Filet

I don't get this analogy.

One is "not allowed in the United States" the other is "has no flavor".

Ribeye anyone ?

I went by quality actually  :)

A good ribeye beats them both.

Kobe has a very different type flavor, only had it once in Japan though and they don't allow in the US

I can honestly say I'd rather see Bon Jovi live these days - at least they'd be funny. Musically Bon Jovi are ridiculous obviously. But again I'll take a bit of stadium fun from Bon Jovi over U2's last mediocre efforts.

However history has clearly shown U2 have made way better music - just not recently

If by recently you mean NLOTH then I'd say U2 are clearly still making better music than Bon Jovi (although these things are subjective).  NLOTH is probably a top 6 U2 album for me.

U2 are the artists that I would still most like to see live - provided they play arenas.

I was going to say Ribeye, but its' similar to Prime Rib.

Then again, Coldplay is very similar to U2.

It has NEVER been allowed.

A lot of restaurants pass off Wagyu as Kobe, or serve "Kobe style", but real Kobe has never been allowed here.

I don't know your income but most of us wouldn't be buying it even if it was.

It's about $300 for a 10oz steak IIRC

As the last reply there was made around a year ago, I don't really want to revive it and bump it up.

Maybe a decade ago, when Bon Jovi played in Ireland they did a cover of "One."

In the more recent years, they would do a snippet of Vertigo.  Here is a clip I found on YouTube:

While Bon Jovi has had great longevity and continued success in their careers, U2 have sold more records worldwide, played to more people, won more awards, and more importantly have kept the same lineup since the beginning.

In summary, I think there really is no "versus" in this fight. In fighting terms, you can't pit a light heavyweight like Bon Jovi against a heavyweight like U2.  It would be better to just compare their similarities and shared musical values.
