Off the top of me head:

Streets - the big cymbal crash at the end of the intro when the lights flash on. Just listening to it on the stereo is exhilarating.
Streets - "The cities a flood, our love turns to rust" - takes me away to somewhere better.
Bad - the spiralling guitar after the "Isolation, revelation et etc" bit that just goes on and on. I could listen to it forever.
New Years Day - the opening bass line never ceases to get me excited.
Gone - Are you still holding on ... just drags out the last chorus a bit and is wonderful.
Please - October, November Remember, December - live this was a song that could rival Bad.

Streets intro when the guitar is in full swing

"Desperation, dislocation..." part in Bad

"Oh you look so beautiful tonight" part from City Blinding Lights

Any 10 seconds of Edge's solo in Unknown Caller

And I don't know why but Edge's guitar at the end of Ultraviolet gives me chills every time I listen to it

For me it has to be either the intro to "Zoe Station" or  the break in Beautiful Day that being "See the world in green and blue..." and end with those great harmonies.

Ok, so many people mention Passangers tracks and that is not really U2. Also there seem to be much focus on Edge's solos so to give Bono some credit I donate this bit:
