First ones that come to mind:

Aerial - Kate Bush   ...her best album, 27 years after her first.
Clockwork Angels - Rush
The Book of Souls - Iron Maiden
Ironbound - Overkill  ...the only band I can think of that released their best album 25 or more years after their debut. Actually their best two, as Ironbound's follow-up (The Electric Age) is just as good.
Laugh Now, Cry Later - Ice Cube
King Animal - Soundgarden
Heathen - David Bowie
Shine On - Sarah McLachlan
Transnational - VNV Nation  ...their best album, released 18 years into their career.
The Power To Believe - King Crimson
No Line On The Horizon - U2

I cant think of many of my fave music acts who got better with age. One exception tho, would be The Beatles. I prefer the second half of their out put, as opposed to their early albums.
Certainly, as far as my two fave acts go, their best work was done in the 20th Century. Both have put out a number of albums in the new millenium, but not one of the albums is better than anything done before 2000

i mean i guess "late career" to me is like 20+ years in. i couldn't count Beatles, Zeppelin, The Police etc.

Bob Dylan - Time Out of Mind (and also Love and Theft)
David Bowie - pretty much the whole run from Outside on, but The Next Day and Blackstar in particular
Pink Floyd - The Division Bell
Rush - Clockwork Angels
U2 - SOI
