I'd probably go with One for most people.

For those who prefer their music louder and more aggressive, I'd play a live version of Bullet.

For those who prefer irony and dry wit, I'd play Holy Joe.

One was my reflex answer and it's the song I'd hypothetically choose in most cases but it's not for everyone.

Other than my wife I just can't imagine a situation where I'd be trying to get someone to like U2. I really don't care if other people like the stuff I like.

Probably Streets or One but Beautiful Day is also an option as I think it is more likely to appeal to non U2 fans and would be a good way to reel them in to the tribe.

I harken back to the time of Red Rocks, and "Sunday, Bloody Sunday" seems to capture all the energy that first turned many on to the band:  The anti-war messaging, the military cadence like sound of the drums and guitar, the slow build up to the rousing chorus, the call and response between Bono and the Edge as well as the anthem like shouts of "No More...!  It may not be their best song, but it seems to exhibit much of what they were about.

New Year's Day is probably the song that I responded to most instantly on first listen. I think it exemplifies U2 at their best - gorgeous atmosphere, great vocals, pulsating guitar and a rhythm section that is faultless. Great musical craft all round and a piano hook that will live with you for days.
