There's a restaurant in San Marcos, TX called Torchy's Tacos where I had a Baja Shrimp taco with cabbage slaw, fried shrimp, green chiles, cilantro, and poblano sauce.

I'm trying to get in the habit of constructing "make-ahead" meals! This week, I made a slow cooker jambalaya, macaroni and cheese (unfun adult type with whole wheat pasta, peas, and ground turkey), and a rice and beef casserole.

(thanks for posting the ingredients-how long in the slow cooker?)
that mac and cheese will go in the oven at 350 for 25 minutes. Jambalaya of chicken, spicy sausage, shrimp, celery, onions, tomatoes and Cajun spices was 5 hours at low in the slow cooker.

That make ahead mac was great tonight. It was my first day back at work, baby's first day at daycare, and a generally very exhausting experience!

Our tomatoes are not ready yet, I doubt they will be because of the weather. We have them a lot, but they are still green and not big enough.  :(

the shells? you can buy them, or you can toast up some corn tortillas yourself in an oven. gotta watch 'em, though - you don't want 'em too brittle.

I make 'em like mom: spread some frijoles on the shell, then some meat (usually ground beef or shredded chicken), shredded cheese, lettuce and finally some diced tomato. watch portions: you don't want them so laden that the shell buckles and drops your food on your lap, hahahahahaha.

that came out so awesome I should sell them.

I was watching Pioneer Woman this morning, and she did fried chicken. She battered them, but only fried the pieces long enough to get the batter crispy. She had a rack on a baking sheet to finish the chicken. She placed the chicken pieces on that and finished cooking all of them on that setup in the oven so they'd all finish cooking at the same time. That's when the lightbulb came on in my head.  :)

I used some buttermilk pancake batter mix for batter, with some cayenne pepper mixed in. Fried each battered steak about 4 minutes/side over medium-high heat, placing them on the rack/sheet when done. Then the whole thing went into a 400 degree F oven for about 20 or 25 minutes. Voila - another masterpiece! Served with a salad and some frijoles, and kickass all the way.

I make the burger with the foodprocessor, so the unions go in there raw. Than grill the burger !

Small red potatoes roasted in the oven with onions for flavor. I marinate my chicken exactly as you marinate your steaks!!

Easy slow cooker meal with five ingredients.

Lean pork loin 2 to 3 pound
2 Tbsp butter
1 can whole cranberry sauce
1 package onion soup mix
2 Tbsp dijion mustard

Brown in butter on all sides the pork loin.  Remove from pan ( I use a ceramic coated) and set aside while slow cooker is warming to high temp.   Add cranberry sauce, on a low flame and sauté for a few minutes.  Do not burn. 
Place loin in slow cooker  and scatter dry onion soup mix on top and around.  Add cranberry sauce and cover.  Cook on high for at least 3 hours or until done and tender.  Just, before removing from slow cooker, add mustard and stir into the sauce.  Let it marinate for a few minutes.  Then, remove roast to a platter.  Let it rest for ten minutes before slicing.

I just love anything with egg noodles, extra wide too...I love where you put thin bits of meat in it and
have a sort au jus sauce with it, but i dont know what recipe that is, someone once made it and its was
so filling..

these other recipes you guys put up sound great too...this is almost like the old recipe thread we used to have.

I am having chicken today, not sure what way I will make it yet and mashed potatoes
and a cauliflower and broccoli and for desert a keylime pie....simple but filling.

Santa Fe salad......been inspired lately....chicken strips, marinated in lime then lightly grilled, in a salad with shredded lettuce, black and pinto beans, corn, red onion, sliced olives, sliced avocado, sliced red peppers, sour cream, fried chopped garlic cloves, shredded red and yellow corn chips, balsamic, spiced with cumin and cayenne pepper, with fresh half-limes in nets for added flavor. Served with my signature orange Margarita (mix of lime and orange juice, tequila and TripleSec, water, agave nectar, rims salted on lime juice.

Zucchini, tomatoes, onions and peppers. I didn't put any special  seasonings, just salt, pepper and garlic powder. I should of put eggplant  too. And mushrooms.

Yes, 500 grams self raising flour and 400 ml milk. I use paper cupcake holders not to let them stick. You get 16 out of this, but you can half the recipe.

Thanks it was verry good. Thing is that the chicken gets soft that way. Most idea's i get from watching chefs on a Dutch cooking channel. Hope that you are able to eat all foods soon buddie. Hang on Riffey!
