I'll only go with tours i've seen...

Pop Mart - I Will Follow - loved the way they did live, didn't expect it!
Elevation - Wild Honey and The Ground Beneath Her Feet - NJ Shows
Vertigo - Fast Cars and Crumbs, and actually Running to stand still - so happy i heard this live in my life.

The first leg of Zoo TV (indoor), when they opened with 8 still brand new songs, and ended up playing 10 out of 12 from AB. Not to mention performing Dancing Queen as well.

Agreed Hawkmoon, but then to continue on with this subject, they never played Acrobat! Biggest shock to me ever, I think it would have been incredible live.

yeah, completely. They do throw a few surprises with cover versions etc, but this was the biggest shock (and risk) imo.

Also

Babyface and Zooropa. Though neither lasted long in the set!

Vertigo Tour - playing Vertigo twice!

Why was HMTMKMKM such a shock for the Popmart tour. It was a single a couple of years before, a great song, and they wanted to do it live.

I've only seen U2 on three tours so here are some of my shock highlights

Vertigo  - who's gonna ride your wild horses; an cat dubh;  zoo station.  I never thought I would hear these songs live.

Elevation - the fly; wake up dead man (full band version)

Popmart - MLK. Dedicated to princess Diana who had died just days before the show. Played before One it was a very moving version.

The First Time and Who's Gonna Ride Your Wild Horses back-to-back as the first two songs of encore #1 the last time I saw them. Also, Bad as the very last song of the night at the same show.

ZooTV - Daddy's Gonna Pay. Couldn't see where it was going to fit, but fit it did.
Popmart - I Will Follow. OK, not a 'shock' as I'd seen the setlists by the time it got to Australia, but worked perfectly
Vertigo - The First Time @ 2nd Melbourne Concert. One Tree Hill in Auckland. Wow.

1987-11-07: Helter Skelter, Silver & Gold, Spanish Eyes (before the internet, it was a lot easier to be surprised at shows!)
1992-04-21: Unchained Melody, Slow Dancing, When Love Comes to Town, Stand By Me (look it up... these were either breakouts or super-rare at the time of this show)
1997-05-07: Sunday Bloody Sunday tease in Please
1997-12-12: Wake Up Dead Man > 40 to close
2001-04-15: Sweetest Thing with Bono on keys (never thought I'd see either), I Remember You
2005-04-24: Electric Co., An Cat Dubh/Into the Heart (just lucked out to get these in the rotation; never thought I'd see them), the "Still Running" AND "Hallelujah" choruses in Running to Stand Still
2005-11-05: Until the End of the World (first time back after a layoff of about half the tour, IIRC), Mary J. Blige's appearance on One, IALW with Brandon Flowers and Bad to close
2005-12-19: Help, Instant Karma
